As we look into the rear view mirror at the year we just experienced…once again I am reminded of the highs and the lows it brought……..for us…..mostly highs! We grew as individuals,  as well as a family! It brings a huge smile to my face to hear my husband and daughter talk about things to come……oh…not so much about what we might be looking at as far as the economy and the current state of affairs in America…but rather…the thrill of being one of God’s children in persuit of relationship with HIM! We are experiencing some serious spiritual breakthrough here in our home and I wish I could begin to share about how thrilling it is! In 2009….I just want to know Him more!!! We live is such exciting times and while the world around us might be unstable……we have a most stable God!

I know today is recipe day, and I promise to get to that….but I just wanted to share a simple poem that made me smile this morning….

Dear Lord,
In the new year, we pray
that You will guide us each new day
in paths that are pleasing to You.
Lord, the new year gives us another chance
to rededicate our lives to You,
to study Your Word
so that we know right from wrong
and to act in accordance with Your commands.
Thank you for the sense of
direction, purpose and peace we get
from aligning our lives with Your Holy will.
We pray for the strength and the will to obey You
each and every day of the new year,
and when we fail, we pray for Your mercy,
Your compassion, Your grace and Your love.
Help us in the new year to be your faithful servants.
In Jesus’ name we pray, Amen.

Ok….here is one of our faithful New Year’s Eve dishes! We will be having a houseful of people over tonight as we ring in the New Year together with some of our very very best friends! Karen already passed the ham off to me as she has to work today, so soon…..the house will be smelling like a restauraunt! (I am sooooooo sick of eating and will be relieved when Ashley and I start our Master Cleanse together on Monday….more on that later)

Sweet and Sour Crock Pot Meatballs
Crockpot meatball recipe, made with tasty meatballs, pineapple, bell pepper, and a sweet and sour sauce. Very easy recipe and it does the job when it comes to pleasing the crowd! I always double this recipe.
  • 1 pound ground chuck or round
  • 1 egg, slightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fine plain breadcrumbs or corn flake crumbs
  • 2 teaspoons soy sauce, low sodium
  • 2 tablespoons grated or finely minced onion
  • 1 tablespoon cooking oil
  • Sauce
  • 3 tablespoons vinegar
  • 3 tablespoons cornstarch
  • 1/2 cup sugar
  • 1 tablespoon soy sauce, low sodium
  • 1 large sweet bell pepper, cut into 1-inch pieces
  • hot cooked rice
  • 1 can pineapple, chunks (15 ounces)

Directions:

In a large bowl, combine ground beef, egg, 1 tablespoon cornstarch, salt, pepper, 1 teaspoon soy sauce, bread crumbs, and onion. Shape into 1 1/2 in balls. In a large skillet, lightly brown meatballs in the vegetable oil. Drain well. Transfer meatballs to slow cooker.

In a small bowl, combine vinegar, sugar, 1 tablespoon soy sauce, cornstarch and bell pepper; stir to blend. Pour over meatballs. Cover and cook on LOW for 5 to 7 hours. In the last 30 minutes of cooking, stir in pineapple with juice. If thicker juices are desired, combine more cornstarch with a little cold water and add, stirring, until thickened. Serve with hot cooked rice.
Serves 4.

HAPPY NEW YEAR!!!! Praying that 2009 is FILLED to the BRIM with all the things you love the most! Until tomorrow…..we are IN HIS GRIP!

Like everyone else, we are beginning to feel the effects of the economy here in our home so this year for Christmas I turned to my crafts to see what I could come up with that might qualify as something someone on my list might want and might actually be able to use! It didn’t take long for me to decide on making Quillows! Seven people on my list recieved Quillows from us this year!

The really neat thing about quillows is that you can theme them for the recipient. For example…my 2 year old grand daughter Jazi got a Dora the Explorer quillow, her sister Sayre got an Elmo Quillow, and Ash got an Elvis quillow! Some got coffee themed quillows, while others got victorian quillows!

Quillows are blankets (quilt type) that you can fold into a pillow for your bed or couch.

These were hits during our Christmas this year! On the picture above….(the first one), you can see a tag that’s been attached to the quillow…..it is a quillow poem I found online that I printed and used as a gift tag….on the reverse side of the tag, I printed out folding instructions for those recieving the quillows.

So…in our home….I have mine, the one pictured, Ashley has hers (Elvis)……and Bryan’s birthday is next! I need to go shopping for some golf fabric……

Ok…..first of all……I never did get those pictures in my first post placed where I wanted them to be, but I will keep working at it until I figure it out. I’ll see if I can do any better with today’s post.

I was so excited about setting up my blog yesterday that I could hardly wait until the clock ticked past midnight so I could post again! I know…I know…..get a life right??

Today is my first Family day post! I am going to introduce 3 of my family members to begin with this week……starting from the youngest and work my way UP!

Grandaughter Sayre Nicole Irving~ Age: 3 months

OMGOSH…….isn’t she delicious???? She is the happiest baby I have ever known!! She giggles and smiles without needing any kind of prompting whatsoever. She made her debut into this world on September 16, 2009, joining her mommy and daddy (Shane and Jenny Irving) her big brother (Jonas Irving~12) and her big sister, (Jazmine~2) This was her first Christmas and I swear she was celebrating along with us! Much more on Sayre in post to come…….

Jazmine Monique Irving~ Age: 2 Years

Yup Yup Yup……there she is…..Jazi Mo! Every bit the 2 year old…..already learning how to wink. Until Sayre was born she was our baby girl…..unbelievable how grown up she looks next to her baby sister. Dang……I didn’t know 20 month old kids even knew how to wink so I am thinking she is probably one of the smartest on the planet…..no seriously…….you think so too don’t you??! Jazi turned 2 on Dec. 17th!
Only Daughter Ashley Brianne Wells~ Age: 19 (for a few more days)

Ash is not only my daughter but has become one of my very best friends! She is really beautiful inside and out. She turns 20 years old on January 7th which is really hard for me to believe because she is my youngest. OIY! She is currently enrolled in her 2nd term of Massage School at Pioneer Pacific College where she is studying to become a liscensed massage therapist. I enjoy her so much and she can make me laugh until my pants are wet! Daughters don’t come any better than this one! Ashley is our baby and she grew up with 3 older brothers…….all that to say….she KNOWS how to take care of herself…..tee hee…..more on that later!

I adore these 3 young ladies and you’ll be hearing much more about them as my blog begins to develop.

There you have it…..my three youngest family members and their brief bio’s. Now I can hardly wait to to share the dish on them in future posts!

Until tomorrow…….omgosh……that is SUCH a long time from now…….I mean really…..

I’ve been wanting to blog now for nearly 2 years and just haven’t sat down long enough to get started. I figured since the New Year is fast approaching, now is the perfect time to shift into the blogging mode and get started! I can already tell I have a great deal to learn about this and I am excited to get started.

Bryan and I just got home from some very dear friends of ours house and I’ve got the soup on the stove and about an hour to enjoy myself on the computer so we’ll see how much I can get done!

I wanted to test some functions out here on Blog spot and see if I can learn a few things! We just came through what the news is calling the *worst winter storm* Oregon has seen in over 40 years! WOW! Chicken that I am……I stayed home and INSIDE, so I didn’t see much of it except what was directly out my windows. My brave daughter however……went for several walks and brought home the beautiful evidence of the storm on her camera! Let’s see if I can share some of it here……..fingers crossed now….OMGOSH!!! It actually showed up! Whooo Hoooo!!! Ok……now I am dangerous! LOLOL Yup….here is another! Hmmm…….clearly I have more to learn…….now how can I get these pictures situated in this post correctly…..off to find out now……be back soon >wink<
